    pH Stabilizer

    Uhm...isn't the point of the pH 5.2 to buffer the mash water to a pH of 5.2 which is the ideal pH for enzymatic activity in converting your starches to sugars? I'm pretty sure adding it to the boil kettle is not the intended use for it.

    Lagering

    Yeah, the guy I brew with who has a chest freezer has a strict schedule for lagers and if I want to brew one it has to be on the same day or the day after in order to get on the same lagering schedule as his batch.

    From what I've heard about the Argentinian Cascade is they are NOT like US Cascades. You can always see how your recipe comes out, but I've been told they're quite different.

    As the mistress said, it's really not any more involved than an ale. It does require additional equipment that your typical ale brewer might not have on hand. It's alot longer from brewing to drinking also, but worth the wait!

    I believe 34F is the magic number for the lagering process. We push the temp as low as we can without seeing any ice crystals forming. We've had a couple batches get as low as 30F. Of course, your actual fermentation temperature depends on which lager yeast you're using.

    To start or not to start....

    That's your best bet at this point. If the starter was large enough or you had enough time it's best to crash cool in your fridge for a day to drop out all the yeast then decant off most of the liquid before swirling and pitching.

    As long as the yeast vial/pack isn't too old the starter should get going within 24 hours. Have you seen the Mr. Malty pitching rate calculator for how big to make your starter?

    Ok, one more post then I promise I'll stop. New Holland Brewing Co.'s High Gravity Series are worth checking out. Expensive, but worth the money. I particularly like the "Dragon's Milk" a barrel aged strong ale. Man, I'm getting thirsty.....and I've still got 5 1/2 hours to go at work.

    I'm not a fruit beer guy, but I had Dark Horse Brewing Co.'s Raspberry Ale the other night and that was a good beer. Beer first and fruit a complimentary second.

    Founders' "Dirty Bastard" Scotch Ale, "Devil Dancer" Triple IPA, and "Red's Rye" are all awesome. Bell's "Two Hearted Ale" IPA and "Hopslam"

    Belgian Tripel Recipe help!

    Your plan of pitching on previous yeast cakes is something I've done occasionally, but I have heard you never want to re-pitch on anything with a ton of hops in it (like an IPA). Something about all the oils having a major affect on cell viability. Just a thought.
