    Could also be that the top off water was not thoroughly mixed with the wort. Happens all the time. If you have exactly 5 gallons and you used all the extract that came with the kit, then the OG was whatever the recipe stated it should be

    With ale and lager yeast yes, but wine yeast is ok. If it makes you feel better x go ahead and lower the temp a but it's not necessary

    It's fine, like I said before, wine yeast can ferment warmer.

    Yeah I would let it ride at this point. Wine yeast can definitely be fermented at higher temps

    Wine yeast can be fermented much higher than ale yeast, probably don't even need the swamp cooler. I've fermented batches of apfelwein at 75 degrees

    A 10 lb tank will usually get me through 8-10 kegs. Edit: you can leave the co2 on.

    I found that my IPAs improved greatly once I determined my water profile and added stuff to my water. My water is basic so a little lactic acid in the mash, some gypsum in the boil, and my IPAs have done a 180. They went from lacking that hop pop, to having it. It was night and day difference

    Agree with above. Should be carbed enough. I would not shake at this point
