    I have been thinking about this a lot. I have a ton of mesquite on my land. I made jelly last year and it reminded me of honey. Im thinking about trying a honey brown recipe minus the honey and include a mesquite syrup.

    Saturday I will try one out. I made this batch for a party that is Sunday, but the directions said to bottle for 3 weeks and I will only be giving it 2 weeks, but I did keep it in the seconary about 1.5 longer because it was still working at the orginal suggested bottling time.

    You could just use sugar. On the cucumbers, make sure not to use the seeds or skin, it will make it bitter.

    The 2 gallons are/were seperated into 2 1 gallon glass containers. I will double check the hose, but I have only had this hose for about a month. Things can happen, so I can check. Although, when I cleaned the hose with water, it kept a siphon in water just fine.

    Seems I have the wrong hydro. Its for liquids at 155 deg. The guys at AHS helped a bunch. You guys did too. Thank you.

    Looks to be at 1.034 now. Still high, so not complete. I also tested with tap water I am at 1.015, so my hydrometer seems to be a bit off.

    I found one of Revvy's posts on the subject now. :) Noob question, should I not worry about breaking the buckets seal and allowing O2 in? I would guess, pop the top, get the reading as fast as possible and reseal and forget it.

    Im attempting to brew the AHS Apocalypso. The directions say the fermentaion has stopped after 2 days. The directions say 5 to 7. It was bubbling CO2 like made for the first 2 days and now nothing. Its a all malt kit. Orginal SG was 1.070 (directions said is should be 1.048). Is this batch toast?

    Sorry, I didn't take gravity reading with this batch (first time for wine, and hadn't brewed in 7 or 8 years). It taked like selzer water. Made my tongue feel weird for a few hours.
