    bottling/waiting question

    Yeah, I would open one at 2 weeks and see where you are at... If it is not fully carbonated, at least you get to try one! I like to open one at one week just for kicks. I usually get a little pop, but mainly a flat beer. It is basically an excuse for me to try one.

    I found a recipe I would like to try, but the boil volume is 6 gal. I do not have a pot to boil 6 gal. and prefer not to, so is it a big deal if I do a 3 gal boil instead and add the needed extra water to the primary?

    thanks everyone! I feel much better. I guess I had a little day after anxiety. This is only my third brew and my first time using DME so I was a little concerned. It is fermenting away today at a high pace.

    So, I did a Belgian Dubbel last night and it wasn't clear on when to add the DME. The kit came with priming sugar as well so I assume that is for bottling. There was LME and DME in the kit, so I added the DME at the same time as the LME. I hope I didn't screw it up... I hope the DME wasn't...
