    Maple Sap Brown Ale?

I haven't brewed a beer with maple sap, but I did taste test a glass of pure maple sap from a tree in my yard. It tastes like... water! So I'd say reducing it down would certainly be a good direction to go in - and maybe even boil down a portion of it significantly (say 2gallons down to...

To Secondary or Not? John Palmer and Jamil Zainasheff Weigh In

I'd say go with just the peels -- zest the orange (or use a veggie peeler to zest thin strips).. zesting will increase he surface area and release the oils from the skin, which should provide a bit more flavor than just throwing the whole orange in. then peel and eat said orange. win-win. :)...

What is the smallest viable all grain batch you have made?

I regularly do 1-3g batches with a BIAB setup. I find that it's a better "use" of my time to do higher gravity 1g batches instead of session beers. An 8%abv beer takes virtually the same "hands-on" time as a 4% session beer, but takes me twice as long to consume. For session beers I'll make a...

Beating a dead horse..secondary or not?

After reading numerous threads on secondaries, listening to the Brew Strong, etc, I decided that secondaries were unnecessary. But then.. after brewing multiple batches, I realized that shouldn't be a hard and fast rule, and it really depends on your own brewing practices and preferences. So...

elp with cloning Uinta Brewery's Four+ Wyld Extra Pale Ale

hey kcpup- I wasn't able to listen live, but I believe the most recent Jamil Show/Can You Brew It featured Wyld Pale Ale on it last night (1/9/11). They make the show available via podcast about 2+ weeks after the live broadcast, so you should be in luck! Even if it wasn't cloned, I'm sure...

    How much cocoa to use

I just cracked the first bottle of my bastardized schwarzbier (used an ale yeast instead of a lager, o.g. 1.052), which had two additions of Cocoa and Cinnamon added to the secondary (I boiled the mixture to kill any nasties, of course.. and also added 1 TBSP of sugar to create co2 to re-fill...

American Amber Ale Caramel Amber Ale

Brewed this up last night, subbing Simcoe for the Chinook. The caramel syrup tasted delicious (cooked it to 275F), and the wort smelled and looked great. Gravity was spot on at 1.052. And while I usually rehydrate my US05, this time I pitched it directly into the wort per the instructions on...

    last night's commercial beer experience

Personal preference is the Black Lager is a great example of the style (schwarzbier). dark, flavorful, not too roasty, goes down easy. Irish Red is decent, and the craft beer scene probably owes a fair portion of its popularity to Boston Lager as gateway to moving beyond BMC

    Continously Hopped Amarillo IPA

Just as an FYI, Dogfish Head uses warrior, amarillo, and simcoe in their 60minute IPA. A delicious combo!

Pumpkin ale didn't finish with enough flavor. Help!

In my experiences, after an hour or three of leaving the tincture alone, the spices drop out of suspension and you can easily decant the vodka on top.

Pumpkin ale didn't finish with enough flavor. Help!

I found myself in a similar position when I was bottling my most recent pumpkin beer. I had brewed two pumpkin beers before, both which ended up with varying intensities of flavor. So for my third, I wanted to ensure a level of flavor I was happy with - so I made a tincture of spices and vodka...

I want a basic and cheap beer.

+1 for BM's Cream of Three Crops. It's relatively inexpensive without cutting corners: simple grain bill, few hops, dry yeast & abv in range to reuse yeast again and again, low alcohol / low mash temp (more abv for your money). Go all grain with BIAB and save even more. It's the only homebrew...

Making cider in Fairfield County CT

welcome! Hope the cider turns out well. You may want to check out Graff (use the search function to find it). MANY folks have reported great success with that recipe-- I tried it but not a huge fan.. maybe I'm just not a fan of cider :). And of course, the grand-daddy of apple-juice...

    Red Velvet Ale

KingBrian- your recipes are right up my alley, and I also enjoy the over-the-top Southern Tier selections. Definitely looking forward to hear how this one comes out: as a recipe overall and specifically how the extracts/flavorings from the Spice Barn turn out. It's amazing how many flavors they...

    Check my BIAB math?

While it will be specific to your individual setup, your boil off #s seems a bit low? I'm still learning this hobby, but I don't believe the boil off should be calculated as a percentage of your water volume- but is rather a constant (assuming a vigorous boil regardless of volume): roughly the...
