I would stress a ventilation hood to the outdoors and makeup air is mandatory for any gas burner used indoors. A fire extinguisher and carbon monoxide sensor is mandatory too.

Sounds like you got a good deal. Some "goo-b-gone" will take that residue off. Paint thinner will do the trick too but has some hazardous issues. If you don't mind, put your own stickers all over it. A menu board is a nice addition too.

Enjoy the present (within reason), prepare for the future, learn from the (your) past. If one looks hard enough most of this can be obtainable, perhaps not without some struggles but over time it can usually be done.
