    Octoberfest probelm

    I bought an $20 octoberfest kit from AHS during their anniversary promotion. I didn't realize that was a lager, thus needed to be lagered. I do not have a setup for lagering. Am I screwed or do any of you have any tips or tricks to fix my rookie mistake?

    So I brewed a honey kolsch extract kit last Friday. Fermentation took off like a rocket 12 hours after pitching and then slowed down to about 5 bubbles a minute by day 5. Today I get home and I have beer in the airlock! Had to put the blowoff tube in. Has anyone had yeast just take off like that...

    American Wheat Problem??? Or not???

    I'm not sure if this taste is normal. Maybe most of the "wheats" I have tried are actually wit beers. Anyone know the true taste of an American wheat?

    Thanks for the response. It's good beer, so I'm just gonna relax and enjoy my handiwork. This is my third batch and I am still paranoid about off flavors and infections.

    I just finished an american wheat extract kit I got at my LHBS. It tastes great, but not at all what I would expect a wheat beer to taste like. It is darker in color and tastes closer to a American brown ale/amber ale. The aftertaste is nutty and not mild like say a shocktop. Did I mess...
