I am a newbie having just received my keg setup. I have a 3 gallon brew in my fermenter. I would like to keg it in a 5 gallon corny. This of course leaves a very large headspace. Is this a wise thing to do? Will I be using a lot more CO2, especially to initially purge the O2? WHich...

Yeast cake - Big Blobs? washing

I have noticed that on a number of my brews the yeast cake has many big blobs, like ricotta curds. This happens using new or recycled yeast and with ales and lagers. I want to wash this cake. Strength of hops

How do I adjust my hop bill for different alphas when I brew recipes I have made before. Specifically I have brewed recipes with Cascade pellets with an alpha of 4.5%. Grain database BeerAlchemy

I am using Beeralchemy. It works well but the gain database is UK oriented (many Australian and NZ grains). Most of the listed grains are not available here, and most of the grains we do use are missing, unlike Beersmith which has just about all grains used in our recipes. I know that I can add...

Or am I just stuck with this flavor?

Using large amounts of special malts

I have acquired a large amount of Munich, Vienna, and Victory malts. I notice that the ppg of these is close to pale malt. Since these have pretty good diastatic properties I would like to use them in a large percentage to make malty beers. Can anyone recommend beer recipes that use an...

    Storing Wort

Do I have to use the wort that I get after sparging immediately or can I store it and boil it later? If I can store it, for how long? and does it need refrigeration? I am concerned that wild yeast or some bacteria can get into the sweet wort. Will boiling kill them?

    Fast Fermentation

I started fermenting a 5 gal. pale ale using double pitching and a yeast energizer. Overnight the fermentation became very violent coating the top of the carboy with large amount of kreuzen. If I had any less headspace I would of had a spectacular geyser. It was bubbling constantly and the wort...
