    No one in this thread has said anything about the 1-2-3 rule as a guide line. One week in the primary, two weeks in the secondary, and three weeks in the bottle.

    I buy my kits at Midwest mainly because they are close to home. I think they have fresh product and have very clear instructions. The staff there is also helpful if you have any questions. I just brewed one of their kits last night.

    Okay to use cheese cloth for steeping?

    With the boiling bags you can tie it off so it doesn't touch the bottom. I'm not to sure about using a panty hose for a boiling bag. I think I would opt for cheese cloth before that.

    It doesn't sound like has started to ferment yet. I'm a new brewer myself but mine started bubbling like crazy within 24 hours. I have learned that the temp of the wort must be lower than 80 deg. before you pitch it and should be kept warm enough to make the yeast ferment.

    Is it OK to squeeze the liquid out of the hop bag after the boil? The two batches that I boiled I just took it out and just let it drain. Am I losing anything?

    The first batch we brewed we used a freezer bag full of water placed in a bread pan to contain it before we put it in the freezer. We probably should have boiled the water first but it worked great in our 2 gallon boil. Yesterday we cooled our second batch of wort by filling the sink with snow...
