    So who's brewing this weekend?

I haven't had a brew day like this is a while - Fun with yeast cakes! I had a beefed up stout in a primary vessel for about two weeks & I was going to move it to a conditioning vessel this weekend. I always hate letting a yeast cake go to waste. I went to the brew shop yesterday & got the...

I'm going to have a sore arm after bottling..

That's a nice color for the pilsner from an extract kit. It should clear up even more with time.

    Some pictures I took Today

I LOVE homemade pizza with homemade beer. Good God it's terrific. Have you ever tried grilled pizza? As if I didn't have spring fever already! 5gB

    Mint coffee stout?

I haven't had any oil problems yet. The only time I had a 'problem' with a stout was when I was making a chocolate stout, and used giardelli chocolate. The fat from the chocolate created a chunky layer on the top of each beer in the bottle. Once you got past that, all was good. Chocolate power...

Explain your handle / De construct your avatar

5gBrewer... I brew 5g's at a time. It's hard to believe I haven't upped the amount brewed since I started 3 years ago. It's bound to happen though. 5gB

    Oak chips/ Oak barrel

Extreme Homebrewing (written by the DogfishHead guy) talks about chips vs. barrels. Essentially, barrels are more of a hassle, and are more time consuming. Chips are easier. You can sanitize them by putting them in an oven at 300F for 30 minutes (according to the book). I'm going to try this...

    Mint coffee stout?

Sparky... brewed my Scottish Grogg Coffee Stout today. All I do is brew the pot of coffee (in this case a pot and a half of Scottish Grogg), and dump it in my primary to cool while the wort is boiling. I usually do this with espresso too, and the coffee flavor/aroma is superb. I've never put my...

    Some Christmas eve beer porn!

I had a bottle of that N'ice Chouffe Limited Edition 2007 myself. It was part of a Xmas beer package my wife got for me. Though I wanted to keep it to age longer, I couldn't resist. It was rather tasty! Luckily I live in Asheville, NC where the #3 Best Beer Store in the World is located, so I...

High Gravity Brewing - Secondary Fermenter

Personally, I'd primary for 3 weeks, then rack to secondary for at least a month. There's no need to let the beer sit on a yeast cake for more than 3 weeks, and chance picking up off flavors/aromas. Racking to secondary will let the beer finish doing what it's doing, and let it clear up and...

Help! My friends drank all my beer!

Seriously... I used to bring my HB to my gigs and rehearsals, but realized then that I had a need to brew a whole lot more often. The solution I used was to brew higher gravity heavy beers, so they would get tanked and full quicker. Theaten them with a little gut rot if it helps too. muahahaha...

How many gallons of homebrew in 2009?

Sad to say it, but I'm only at 5 gallons for 2009; made this morning starting at 9:30AM. A Pilsner. 1050 + 5 = 1055

    Riesling Ale sampling

Wanted to give you all a follow up to my own experimental Riesling Ale brew. The flavors have blended a lot better. The overwhelming grapefruitiness has become more subtle, and there is an overall smoothness that is taking place. I'm guessing it still needs a few more months in the bottle. I'm...

    Brews Cruise Asheville

I'm glad you enjoyed the Asheville Brews Cruise! Highland does make some fantastic beers for such a large operation. Their Kashmir IPA is great, and I really like their Kashmir Double IPA when it is available. Those are just two of their standout beers for my taste. I have a liter bottle of...

    Re-using yeast from fermenter

I used harvested yeast all the time, without washing it, and without problems. I am as sanitary as possible when dealing with the yeast, and refridgerate it immediately. I try to use the harvested yeast as soon as possible, but I've used jarred yeast collections up to a month old with excellent...

Pumpkin Ale - Using Fresh Pumpkin

I made a pumpkin beer with an extract/specialty grain recipe two years ago. You're on the right track by baking the pumpkins. Do that a day or so before you want to brew, then chill the pumpkin cubes in the fridge. Now, I boiled the pumpkin chunks in the wort, and the beer was pretty good. I've...

    Conditioning a High Gravity Ale

I brew a lot of HG Belgians. I'd move the beer into secondary now. There's no need to keep it sitting on all that yeast; you might pick up off flavors if left on it for too long. Bump it over to secondary, and let it sit for at least a month. The best Tripel I made sat in secondary for 3 months...
