    What to expect from Mash vs Boil vs Secondary?

    I'm pretty new to all of this myself, but I've put grapefruit zest and lime leaves in the boil before--two separate batches. I put them in at the end of the boil, last 3 minutes about. It added to the aroma. I'm not sure how the cinnamon or ginger would work.

    Old CO2 Tank

    I took it in to get it filled. Turns out it's an oxygen tank. And it's really old. So I just bought a co2 tank at the place that fills. I wanted to get one online, but I was just so ready I went ahead and did it.

    I was given an old CO2 tank. It's about 4 feet tall and doesn't have the normal valves on top that I've seen online. Any ideas about where to get the pieces to attach it to the regulator. I haven't kegged any beer yet. This is my first attempt and someone was nice enough to give me the CO2 tank.

    Thanks. The temp was regulated better during fermentation. I just haven't had the time to bottle recently and the carboy has seen some rise in temp.

    During this hot time of the year (and the fact that we lost power for a couple of days), how important is keeping a steady temperature during secondary. And if it gets hotter than you'd like, is there anyway to remedy that?

    I like Guiness. But I'd give some others a shot to experience the variety in the style. I really like Bell's Special Double Cream Stout, Left Hand Milk Stout, Old Rasputin Russian Imperial Stout.

    I agree with Pisgah and Highland. And Barley's has a great selection of beers. I got my first home brew kit at Hops and Vines in Asheville--good selection and knowledgable folks working there.

    Bell’s Brewery sends cease and desist letter to Northern Brewer

    This is great advertising for Northern Brewer. Bell's is basically saying that they are scared by how close the beer is to theirs. I'm going to buy a kit now.

    I was looking at that site. There is a huge difference between an American Wheat (2.3-2.6) and Weizen/Weissbier (3.6-4.5). Any thoughts about an American Wheat recipe kit that I used Hefeweizen yeast for?
