    purely opinion here, but if the cost was cheap enough i'd play with the hongkong special went with Auber for my direct-fired controller's PID and the cost (~45 bucks) was low enough to not look at alternatives -- especially compared to the cost of nema boxes and the other components don't...

    1-Wire Fermentation Control System

    That's a pretty clever setup! I agree there are many ways to skin that cat, but that is very cleanly done. Any chance you could put up that schematic? I'm venturing into pcb etching and this would be a great project to chip my teeth.
