    Nice tiles! Perhaps take another reading or try with another hydrometer. Unless you planned on making an incredibly high alcohol beer, 1.49 sounds really high. Many imperial stouts and barleywines are around 1.104.

    It would not hurt at all! In part, steeping washes the fermentable substances off the grains, so it probably helps to a degree.

    I think Founders' Red's RyePA is an all Amarillo concoction, which is a pretty popular beer in the Midwest. Try it out in a stout where aroma additions are large.
