    I think you'll be ok with the steep temp, but did you sparge your steeping grains? if not like a previous poster mentioned you might wind up a little thin. not by much though since they are really just flavor enhancers in this recipe. your hop schedule confused the $#!t outta me at first...

    its grains, and yes I steeped it for a full hour. I'm now onto the boil, filtering out the grains is always a challenge for me as my setup leaves a lot to be desired for using grains that aren't in a muslin bag.

    Top-cropping and headspace

    as PTray mentioned you want the headspace to keep your yeast in the fermentation chamber, if you go with too little headspace your going to lose enough yeast that your yeast is going to strain itself reproducing. not ideal.

    I think the list of things I haven't used to open a beer with would be shorter that what I have used. if an object is fairly solid with a corner or lip it can and most likely will be used.

    is it still fermenting? or are you bottling? I have found cold crashing helps clear a LOT. I still havent succefully gotten to the "filtered" look of clarity. but I have definitely dialed it back from a murky haze to a slight fog.

    I've created over the top recipes for the certain style, and that's definitely an ok thing in my mind, I think one person describe the potential result as "downright chewy"..... I have also made some that are skimming the very bottom of the "style range" that came out pretty darned good...
