    I have a 7.5 gallon stainless steel brewpot and when doing large boils my stove has trouble keeping a rolling boil. My question is whether it is safe to have a the brewpot over two burners since some of the flames will be going up the side of the pot. Thanks and cheers!

    I don't have a racking cane. I use an auto siphon. Also I am using S type airlocks. If I pitch now do you think I'll have time to get to a hardware or homebrew store in time to prevent a mess?

    nearing 14 days in primary

    Gravity readings help to determine if fermentation is complete. If the gravity doesn't change over a few days then you will know that it is done. Also you can determine the ABV and ABW of your beer. Right now your beer would only be a 2.8% ABV so i highly doubt it is done.

    It called for boiling 2 quarts of water for 60 minutes and adding the first two hop additions to the water rather than the wort.

    I screwed up my hop tea.

    A hop tea is adding the first two hop additions in boiling water rather than the wort boil. The recipe calls for a hop tea because there would be a poor hop utilization with a partial boil since there is so much malt in the recipe, 12 lb LME.
