    Jaf... You could have a very good point. I just tried another bottle (5 more days in the bottle), it is most definely more carbed, but still tastes darker than I had originally anticipated. The head is beautiful. I need to take another picture. Will more time in the bottle lighten the beer?

    Just a fuller body, thicker. When I think of witbier, I think of a lighter more crisp taste. This brew does not have that taste to it.

    Woodstone, your final sentence captured my thoughts perfectly. Calling it a stout was a bit far fetched. I will post pics soon. The color is a deep gold. I guess my question comes down to...what makes the witbier turn out on the darker side of the spectrum? What makes it turn out lighter?

    Is my first brew ruined?

    Revvy, I wish I had a cat hump my fermenter! Might speed things along! My first brew is at 7 days in the fermenter and it still hasn't completely finished. I think I might need to head to the pet store to get a "Brew-helping" cat.

    the brew will hit 7 days in the fermenter in about an hour. The fermentation took off like a rocket but the airlock stopped bubbling at about 36 hours. Since then, I have had this green, thin, bubbling layer of goo on top. The layer has thinned out from about .5 inches to maybe .12 inches.

    When do I know for sure that the brew is finished? Like I said above, the SG has leveled off, which is supposed to be the main indicator. Should I wait for the green goo to disappear?

    it is the brewer's best Blue moon clone. I believe the slower fermentation is due to the 62 deg fermentation temp.
