Last few batches have been "off"

Thanks for all the good ideas. I have other places I can store at, so maybe a room with a little high temp would help. Thanks.

Last few batches have been "off"

The sugar is the priming sugar from the kit. I heat 2 cups of water to boil and then add the sugar and stir. I move the beer from my primary to my bottle bucket and add the sugar mixture. Let sit a second and then bottle. Put them in the basement where it stays around 65 degrees year round in...

Last few batches have been "off"

So like the title says, my last few batches have been quite off. I've let them sit in bottles for awhile and they're all coming out a bit flat and very lemonny tasting. Granted I have been using hefe strains of yeast but even the scotch wee heavy I cracked into lastnight had lemon flavors and...

    Question on bottle conditioning

Hi, I have a random question. Would it be possible to bottle condition in something bigger than the typical 12oz. bottle? Something like this? http://www.containerandpackaging.com/item.asp?item=G005 I say this, because it's very rare that the wife and I enjoy just one beer, and we'd like to...

    Brewers Best kit... Instruction help

It's not brewers best, I screwed up in the topic and I can't change it. It's a brewcraft kit.

    Brewers Best kit... Instruction help

So next random question; the kit instructions said to leave in a primary for 5~7 days, which in my opinion sounds a little on the short side of life. Obviously yes, I know take readings and whatnot with the hydromater but I usually leave things in 2~3 weeks. Any thoughts? I know wheats are...

    Corn sugar in extract recipe?

I might be wrong but that's the priming sugar for your bottles later on for when you're ready to bottle.

    Brewers Best kit... Instruction help

It was brewcraft not bb, I tried to change it but I couldn't change the topic. Turned out ok, the grain bag stuck to the pot, so some grain came out. I got it filtered out but smelled really good. Already has some krausen forming.

    Brewers Best kit... Instruction help

Yeah reading more threads here, I guess I'm gonna want to do the orange peel for 15-20 minutes. I'm gonna bag the peel and drop the seeds directly in after crushing them. Are my thoughts on the dme right though? 50 + 10 or all at once?

    Brewers Best kit... Instruction help

So, these brewcraft kits really leave some to be desired. Yes I know I can figure things out, but as far as the instructions go, it's pretty lackluster. I got the belgian wit kit and I'm brewing it today, but I have some questions. I know, the grains in the steep bag @150 for 30 minutes, but...

    Hops adding and time?

Ok cool, sounds good to me. I'm excited, I'm hoping this turns out as good as the liquid extract weizenbeer I did as my first one.

    Hops adding and time?

I thought higher alpha was used for bittering?
  13. mattymatt79

    Hops adding and time?

Yeah? Reading other instruction kits that I saved, add bittering hops, boil 40-60 minutes, add flavor hops for 5-15 minutes. I'm thinking I do 45 for willamette and 15 for mt. hood. Anyone?
  14. mattymatt79

    Hops adding and time?

So I bought an American Wit kit from BrewCraft and the instructions really don't describe the hops. I have Willamette and Mt. Hood hops, in which order do I add, and for how long do I keep in the boil? Willamette is 4.7% Alpha and 3.7% Beta Mt. Hood is 5.5% Alpha and 6.2% Beta My...

    Liquid Yeast Question

It's a liquid White Labs vial. Ok, so I should do a starter. Cool, I guess we'll brew the beer tomorrow and do the starter today. Great advice and thanks for that. It's a White Labs American Hefe yeast vial.

    Liquid Yeast Question

OK, one problem is I don't have what I should be shooting for an OG. More research go go! Thanks though, I'll continue on.

    Greatest Compliment EVER!!

    Liquid Yeast Question

So the other day I was at my LHBS and I got all the ingredients to brew a Sam Summer type clone, but the guy gave me liquid yeast... something I've never used before. On the instructions on the bottle, it just says bring it to room temperature since it's been in the fridge since I bought it...

Can you go from brew to drinkable for a hefeweizen in 18 days?

I did a 1 week primary 1 week in a bottle and it was a little flat but still very very tasty. Had some barebones carbination but very drinkable.

Two stage fermentation or bottling from bucket

Ah ok, that makes sense then. Guess I need to get another brew into that empty carboy then is REALLY what you're saying then. I guess I'll have to convince the wife that we need another one going.
