    need sour beer advice

    Just added rosellare to my sour at 1.018. I've made my recipe from others i've read. I want to add oak and tart cherries, some recipes say to add with the bugs, some say to add about 6 months in? any input on this?

    Help ID bitter off-flavor (taste like tonic)

    I have had an off flavor that I think you are describing as well. It only comes out in my highly hopped beers with no dark grains. ie, IPA and a Black IPA that I mashed the dark grains too late and didn't get anything but color. I think I've read the dark grains can affect pH? I've been getting...

    I hadn't planned it out yet, I need to look into dry stouts, then I was thinking of just modifing my existing oatmeal stout recipe. Now that you mention it though I saw an episode of brewing tv where john palmer was toasting oats and it looked like something i'd like to try.

    Last year I bottled a bunch of RIS in various bottles with wine corks. the bottles that were made for corks seemed to hold carb, but the regular 750ml's didn't, they were quite flat. Based on this I am going to cork my sour next year with corkable bottles and wine corks.

    I was able to rent a four tap jockey box from a local homebrew club, the frist club I contacted didn't have it available that day, second call got the jockey box for rent. So that seems to be a good resource if you need to rent one.

    My First Year

    Once I got my pipeline built up I stopped getting overly anxious to bottle my beer too early. Just keep brewing so you always have beer to take your mind off of the fermenting beer!!
