    spontaneous fermentation?!?

I'm using an immersion chiller but with ground water temps near 80 degrees, it takes forever to cool. Once the wort got down to about 90 degrees (one hour) I left it in my chest freezer until it dropped to 75. (about 3 more hours) It was in a converted keg / kettle with a lid on it, but not...

    spontaneous fermentation?!?

So I brewed an Octoberfest on Sunday. I made a starter Saturday night which I finally felt was ready to pitch on Tuesday (using WL Octoberfest lager yeast). Meanwhile the wort was sitting at 72 degrees in a storage closet. When I went to pitch the yeast I found a krausen in the fermenter. The...

    Burned LME

Brewing an IPA using liquid malt extract and a new bazooka screen which prevented me from stirring properly, I noticed some of the extract got scorched on the bottom of my keggle. Most of it floated to the top which I screened out. What affect will this have on my beer? Thanks.

Will changes in Keg temps harm my beer?

Will having previously refrigerated & carbonated kegs un-refrigerated and off CO2 for up to 48 hours damage the beer? The kegs could reach exterior temps of 70+. I have to load my kegerator and kegs into a moving truck. Thanks.

    Mold in my freezer?

I recently got a chest freezer and installed a Johnson Controls digital thermostat to be able to brew some lagers. I'm also storing kegs here as well. I just noticed when pulling one of the kegs out there is some mold growing on the exterior. Considering this is a dark, damp, cool environment...

    5 Gallon Boils

I'm doing 5 gallon boils in a converted 15 gallon keg. Sometimes I find that as it approaches boiling the steam coming off is so thick I can't see when it is actually boiling. It becomes quite annoying as I can't see anything down in the kettle. Anyone have this happen? Anything I might be...

    Keg line sanitation

I've got a couple issues with stuff in my keg lines. The first is an empty keg line grew some reddish purple stuff in it. Keg line cleaner has been sitting in it for days with no luck cleaning it out. I'm sure I'll need to replace the line, but just curious if anyone knows what this might be...

    Perlick faucet question

I recently began kegging and for my first two kegs I was using picnic taps. I had my regulator set to 9# and everything was fine. I just installed Perlick faucets and now my beer is pouring with way too much head; almost half the glass. Pressure is still set at 9#. Any thoughts?

    Full boil extract brews?

When doing a full boil and using enough to account for boil off (approx 6.5 gallons), do I need to make any adjustments to the recipe to account for the added volume? Added DME?

    General sanitation

So it's not necessary for C-brite to dry in order to sanitize, correct? And no need to worry about the chlorine odor from the C-brite?

    General sanitation

I am just getting started and have some questions regarding sanitation. I was given C-brite as a sanitizer and cleanser. The instructions recommend air drying. I noticed there is a slight film and chlorine odor after the product dries. Will this affect the flavor of the beer? Should I rinse...
