Sour Plum Porter, When To Use The Brett

Hey all. I'm going to brewing up a Porter this weekend. In four weeks I'm going to transfer it to 10 lbs of plums and secondary it for about two weeks. I want to funkify it with Brett B. Should I add the Brett B when transferring it to secondary, or wait and add the Brett B. after the two weeks...

    More Yeast?

I brewed a recipe that is similar to Northern Brewer's Petite Saison (All Grain). The mash temp was a big low, so I ended up with absolutely no body. OG was around 1.053 iirc, and the FG was down to a paltry 1.003. Then I racked on to some plums which brought it back up to 1.009. After 2 more...

OT - Just Met Jamil Z

A little/lot off topic, but I just met Jamil Z at a Heretic tasting. Very nice guy. Just wished I would have remembered to bring my own beer for him and the other guests to taste. Oh well. Good beers, good guys.

    Kettle Dip Tube Question

Reading some of the threads today made me think about dip tubes. Has anyone tried using something like: http://www.midwestsupplies.com/weld-b-gone-deluxe-kettle-conversion-stainless-steel-with-no-barb.html with something like...

    Kaboom!

Love those bottle bombs. Brewed up a nice Porter (think Black Butte Porter in flavor) last 4th of July. Had it in primary for 4 or 5 weeks (don't have my notes on me). Been in bottles since. Tasting great. Than sometime with in the last month (haven't had one for a while, been drinking my...

    Laughing Dog Brewery (Slightly OT)

The other night my LHBS had the Laughing Dog Brewery in for a beer tasting. They were revealing their new Imperail Coffee Porter called Anubis. They also brought a bunch of their other brews along for us to try. It was nice to try some styles that I hadn't had in the past as it gives me an...

Are Fusel Alcohols Guaranteed To Have A Taste?

Everything I've read seems to indicate that fusels will have at least some sort of "hot" taste. I'm equating that to drinking hard alcohol (true or false?). Will you or should you always be able to taste fusels? I brewed up Midwest's Porter recipe and let it ferment for 5 weeks. Then bottle...

    Bucket Grommet (not Airlock Size)

Has anyone seen any place selling grommets that can be used in a bucket lid that are big enough to fill rubber stopper sized holes? I want to take out my airlock sized grommet, and drill the hole bigger so that I can use a larger grommet and a blowout hose.

    Cold Condition DunkleWeizen?

I've been looking at this recipe for quite a while: http://www.brewingwithbriess.com/Assets/PDFs_Recipes/Briess_DunkleWeizen_JulAug09.pdf and it says to primary for 10 days at 70F and secondary 14 days at 35F. Obviously the days are going to vary based on how the fermentation goes etc...

Does anyone know if AHS puts their recipe instructions online (similar to how midwest does)? Thanks

    Wort Chiller Water

After seeing several postings today regarding wort chiller, I'm finally going to ask those that have chillers this: What do you do with the water you run through the chiller? In the summer, I could see possibly running it out onto your yard or garden or whatever. But in winter? That's a...

Anyone Used the Briess Recipes Before?

Has anyone tried one or more of the recipes at www.brewingwithbriess.com? I'm contemplating doing their Dark Chocolate Porter recipe for my next batch. It calls for 7 lbs of their Golden Light LME. Seems like most places sell it in 6 lbs for LME or odd sizes for DME. I'm guessing I could use...

First brew is in the fermentor

Patience and lots of studying has paid off...at least in the brewing process. My first brew (Midwest Supplies Porter) is now in the fermentor. The hydrometer sample tasted pretty good, and was perfectly in range at 1.044.

5 gal recipe in 5 gal carboy?

I'm quite sure this has been answered 1000+ times but whatever I searched for wasn't the right thing. So I'll ask anyway. Is a 5 gal carboy large enough for doing a 5 gal recipe? Last night I filled my carboy up 1/2 gal at a time to mark with a sharpie where they fall. The 5 gal mark is...
