    Cider isn't fermenting??

    well there really is two categories. . . you killed the yeast (doesn't seem like that is true, if you didn't dissolve all the brown sugar surely it wasn't hot enough to kill yeast) or the yeast was already dead.

    Yeah I am also interested in what that means. 2 oz of coffee or 2 oz of coffee grounds? I also wonder how dark of a roast to use. Seems like too dark and it would just taste like "roasted" and the coffee taste would be lost. . . something more medium? Even a breakfast blend?

    Did you use store bought cider? It could be preservatives stopping the yeast. . .

    The pasteurization isn't what makes it not ferment its the preservatives. if you put in another cider with potassium Benzoate you may have killed your yeast. you can use lactose to backsweeten. The UV pasteurization is supposed to make a clearer cider and the heat pasteurization a hazey...

    bottle aging?

    I was thinking that might be the case. I think its average carbonation but when it went into the bottles it was clean and clear. . . now there is stuff at the bottom of the few bottles left. Dead yeast like at the bottom of a wheat beer plus... something. Cider leaves a big pile of nasty...

    Hi. . . Ok I brewed this (one case): 2.5 gallons of cider 2lb of dark brown sugar 1 package of Lalvin 71B (wine yeast) for 3 weeks. Tasted it. WOW, strong. Lots of alcohol. So following the rest of directions, added: ~1/4 lb lactose (didn't have a scale) 3/8 cup white sugar...
