My ciders have been in primary for months

Wow, thanks for the replies. That makes me feel a lot better. Now I just need to find some time to bottle.

My ciders have been in primary for months

The pear was just a gallon of Gerber pear juice, about 4oz of corn sugar and the yeast. I'm concerned that the yeast will be dormant at this point.

My ciders have been in primary for months

I'm wondering if they will still be able to carbonate in the bottle. One is a five gallon batch of Ed's Apfelwein using the Montrachet wine yeast and 1lb of sugar instead of 2. It is on week 9 or 10. The other is a one gallon batch of pear cider using the Cote de Blanc yeast. It is...

How can I make it sweeter?

Adding more sugar to increase the alcohol content will also increase the dryness. I debated between lactose and splenda with the last batch I made and went with the splenda. It adds a bit of a wierd taste that is tolerable but I won't be using it again. A friend of mine used a fresh apple...

    Asheville, NC brewpubs???

I'm curious about the rant too. I've only been there on a day trip to the Biltmore estate. I wish I had known about the brewpubs. The wife and I ate at some lame little restaurant close to the estate before driving back to Winston. Next time the folks are in town I'll drop them off at...

Need advice for wheat beer recipe

Picked this up on the way home: After trying it I think I bought the wrong beer. Oh well, it tasted pretty good.

Need advice for wheat beer recipe

I understand the question and I was just reading through the style guidelines trying to find an answer. Hefe's don't exactly turn my stomach but there is a quality I don't care for. I think I used the term sour because a friend recently brewed a Hefe, which everyone seems to like, that I...

Need advice for wheat beer recipe

Alright. I'm going to the LHBS on the way home for another airlock. I'll pick up a Weihen and try it again. It has been awhile.

Need advice for wheat beer recipe

You're right, I was mistaken when I wrote the 3056. BTW, if you ferment 3068 at 78 degrees it's like eating a banana with a little beer on it. The AC wasn't working too well this summer. :)

Need advice for wheat beer recipe

Paulaner is okay and Weihenstephaner had the sour taste I mentioned earlier (They also have the only dunkel I've had that I don't particularly care for). Hacker is a new one to me. None of them are beers I'd order at a bar. Blue Moon is alright and I'll order that if the only other options...

Need advice for wheat beer recipe

I should have been more clear on the preferences. I don't like a lot of Belgian brews (Wyeast 3056 style). I think it's the yeast, because it's definately not the hops I have an aversion to. Beers like Widmer Hefeweizen are alright but nothing special to me. I already have plenty of dunkel...

Not happy with the LHBS here in calgary

My wife is from Calgary and we were there for Stampede last July. I have no comment on the LHBS situation but there were two outstanding brewpubs there. One was both downtown as well as on the outskirts but I can't remember the name. Brewsters maybe? The other one was Wildwood. I was...

Need advice for wheat beer recipe

First and foremost: I love dunkelweizens and I like American wheats. My favorite beer on Earth is the Aventinus wheat dopple. I do not like hefeweizens -- too sour. Sitting at home I have: 3lbs of wheat DME 1 lb of roasted barley 2 oz tettnanger (3.9 aa) 2 oz hallertau (4.5 aa) Wyeast...

    Ultimate sixer?

Why would you limit yourself to only one six-pack? Total Wine, an East Coast chain where I buy my beer, stocks a lot of free standing bottles so you can pick and choose. The only problem is you'll pay a little more, most of your average brews cost $1.50 -$2.00. But, I like variety so...

    alright whos guilty?

Only being a year into this I'm not far from starting out but I didn't have to make that post. The guy who got me into this fattening hobby likes to brew high grav IPAs and you learn what you're taught.

    Samuel Adams Honey Porter

I can't comment on the Honey lager but I'll keep my eye out for it now. I think their black lager is one of my favorite commercial brews.

    Your First Brew

My first was a dark ale extract kit that was a little on the bitter side. The next one was a nut brown ale kit from the same company -- it initially tasted like drinking a brown ale followed by throwing some grass and dirt from the backyard into your mouth. It mellowed towards something...

Apparently the US flag has been banned in a school

I don't generally crosspost stuff but this got me pretty irritated and I thought people should know what's going on. So much for freedom of expression. http://www.nbc17.com/midatlantic/ncn/news.apx.-content-articles-NCN-2007-09-11-0027.html SAMPSON COUNTY, N.C. – On the sixth anniversary...
