Walker thanks for the tips. I see you're hailing from Cary, NC, which LHBS do you shop at? The only one I know of is Grapes & Hops.

    New To The Cheese

Hi all! I recently visited a home brew store in Portland, OR and it got my wheels turning on getting into cheese making. So naturally I turned to the wisdom of this forum and Google, of course. With that being said any tips for a newbie getting into the cheese making arena? I was thinking of...

    My big cider batch!

I have a bunch of this stuff left over too. Alcohol content was pretty high in 2x1 Gallon batches. Kinda moonshine-ish. Any suggestions from the community as to what to do with all the rest I have left over? Not a huge fan of moonshine.

Using maple syrup or honey for priming

I went with 1.5 Teaspoons to be on the safe side. I figured I might as well heed my elders on the first go round.

Thanks for the info. Good to know stuff. These are the bottles I plan on using. Do you think they'll be up to additional sugar?

Using maple syrup or honey for priming

My girlfriend bought me the Mr. Beer brewing for my birthday yesterday. I made a batch and was looking through the instructions and it suggested for its 1 liter bottles to use 2 1/2 TEASPOONS for each bottle. Is this just because its a beer recipe? Honestly I expected less sugar added to the...

Cinnamon in Hard Cider? Too Much? Possible Fix?

UPDATE: The syrup has thinned a little bit. It's been a while since I've tasted it once more since last time and it's a bit thinner. Can this be solved through more fermentation? Anyone have any thoughts on tossing a little more yeast in there? I was thinking of bottling next Sunday. It...

    Spiced Winter Cider

I have not experienced myself but I have read both here and other places that the Oranges citrus can kill the yeast. But your ingredients sound good.

Cinnamon in Hard Cider? Too Much? Possible Fix?

Well I taste tested the other day and the batch was still a bit syrup like and sweet. The cinnamon flavor though was not at all over powering for me at least. Another batch I made the day previous had a slightly more alcholic kick to it. Although the cinnamon batch is still bubbling and...
