    First All-Grain BIAB

Since I don't have the equipment for all-grain, or the means to buy the equipment yet, I am trying my first all-grain as a BIAB. I've read a lot of the threads on BIAB, but I have a question about the recipe in Beersmith. When I enter it as an All-Grain recipe, I then select the Single...

    Bottle Bombs?

I just bottled a Weissbier and am wondering if I'm going to have bottle bombs. The beer fermented out completely in the primary and sat at the same FG for three days. I bottled it yesterday morning with 3/4C corn sugar. By this afternoon, about 30 hours after capping, the yeast had noticeably...

Partial Mash: Contraband Chocolate Imperial Stout

I'm planning on doing my first partial mash (according to Deathbrewer's counsel) this coming week. Here's the recipe: Recipe: Contraband Chocolate Imperial Stout Brewer: Dechert Style: Imperial Stout TYPE: Extract Recipe Specifications -------------------------- Batch Size: 5.25 gal...

    Imperial Chocolate Stout

I'm brewing an Imperial Chocolate Stout for Christmas. Beersmith has it coming in at 11% ABV and 76 IBUs. I was going to add the chocolate when I rack from secondary into the bottling bucket. Right now I'm thinking 1 oz. of unsweetened Belgian chocolate powder and some Godiva chocolate...

Calculating dry hop IBUs in Beersmith

Is there any way to get Beersmith to calculate my IBUs when I'm going to dry hop in the secondary? Every time I enter my hops as "dry hop," the IBU ratings in the recipe disappear. Thanks for any info.

Dos Equis Lager clone (Off Paper Lager)

Here is a clone recipe I fiddled with for my neighbors who love Dos Equis Lager (not the Amber stuff). Once it is done conditioning in the bottle, I plan on snapping a few pics and putting the whole thing in the HBT recipe database. At this point, the taste is almost spot-on and the color is...

    Restart fermentation

I am brewing a Dogfish Head clone that went into the fermenter with a 1.075 OG. I pitched a 2L starter of Wyeast 1099. Fermentation began almost immediately and went crazy for days. After 9 days, it died. I checked and the SG was 1.040. I swirled it in the carboy and let it sit, hoping it...

    Slate V on homebrewing

Just saw this video on Slate. I guess homebrewing's going mainstream - of course if everyone drinks their first brew out of the bottle, it might end as quickly as it begins!

    Boilover before boil begins!

OK, here's the deal. I need advice in the next 30 minutes as I am in the middle of a brew. I am doing an extract brew with 11 lbs. of malt. I started with 1.5 gallons of water in a 5-gallon brewpot. I can't even get the wort to boil before the foam heads for the top and I have to shut...

Do I need a blowoff tube for this recipe?

I am planning on brewing the following Dogfish Head 90 clone in the near future. I am only using a fermenting bucket for my primary at this time. Due to the high OG, should I arrange to use a blowoff tube? To this date, none of my brews have created too much krausen, but I'm wondering if this...

    Jeremiah Red wannabe

I used to drink Jeremiah Red at BJ's a lot when I lived in Dallas. Haven't had any for a long time, so I figured I'd try my hand at it. Here's what I came up with in Beersmith. Recipe Specifications -------------------------- Batch Size: 5.00 gal Boil Size: 3.00 gal Estimated OG: 1.075...

    SafLager S-23 temps

I am brewing a Dos Equis Lager clone for some friends of mine who love the stuff (I personally can't stand it). Anyway, I'm trying to recreate some of the apple cider/fruity taste of the beer and read that SafLager S-23 is fruitier tasting the warmer it ferments. Is this true? Does a warmer...
