    What are you drinking now?

Homebrewed Black Walnut Porter. Really pleased with this, unlike some of my brews.

    Dimethyl Sulfide Question

Brewed my first 10 gallon batch a couple months ago. An APA that I've brewed a number of times and really like (and why I brew it so often). Anyway, pitched it in two separate carboys with the same yeast. Kegged one first, it was fine. Kegged the next one and it has a very strong DMS flavor...

    First 10 Gallon Batch

I'm planning on a fly sparge, which is what I typically do.

    First 10 Gallon Batch

Might try my first 10 gallon batch tomorrow. Is there anything that I need to know beyond what seems to be the obvious (double the recipe)? I assume that there's not, but you know where assuming can get you!

    Phenol Flavor Follow-up

Follow-up: Brewed another of Biermuncher's Centennial Blonde 16 days ago and placed it in the suspected infected carboy, after nuking it with bleach. Sampled it tonight while testing gravity and preparing for a cold crash. The phenol off-flavor has nowhere to hide in the blonde and is nowhere...

    Phenol Flavor Follow-up

I thought that it was due to chlorine/chloromines due to the fact that I had only been using tap water and likely made worse by fermenting a bit too warm. For this to be the case though, it would mean that the amounts of Cl in the tap water varied as I only had this problem from time to time...

    Phenol Flavor Follow-up

Have been cleaning with Oxyclean Free and sanitizing with iodophor. Previously had been using Cleanitizer from AHS which cleans and sanitizes. I don't normally give the carboys a long soak when cleaning.

    Phenol Flavor Follow-up

I posted about a month ago looking for guidance for a very strong band-aid flavor that I was getting occasionally. The odor and taste was so strong that it made the beer just about undrinkable. A local brewing expert tasted the beer and confirmed that it was phenols. Also, he came to the...

AAAHHH! Help me solve Band Aid Taste

Update - Took the bad beer to a local homebrew expert. In his opinion, it does not taste like an infection, but like phenol, likely due to our water. I'm guessing my warm fermentation temperature made this worse. Anyway, he was kind enough to come over this morning and watch me brew, giving...

AAAHHH! Help me solve Band Aid Taste

Yeah, the boiling didn't improve anything. However, I did learn that 1 gallon of carbonated beer will foam out the top of a 5 gallon pot very easily when it approaches boiling temperature!

AAAHHH! Help me solve Band Aid Taste

This is something that I hadn't thought of trying, but would sure be easy to try. I'm wondering if it is bacteria, would the flavor go away after boiling? Seems like it would still be there, just dead. We'll see, I'm off work today and will go do that right now. Thanks.

AAAHHH! Help me solve Band Aid Taste

I was planning on brewing tomorrow, but I might wait. Just got home and tried the IPA again, which was dry hopped, and you can't even taste the hops over the band-aid. It's just that strong. I think what I need to d is find an experienced local home brewer and have him taste this to get his...

AAAHHH! Help me solve Band Aid Taste

Cleanitizer from AHS, but has also happened once with Iodophor.

AAAHHH! Help me solve Band Aid Taste

I use Cleanitizer from AHS to clean and sanitize, which is a no-rinse product, though I do rinse. I had gotten this one time before, last year on a mini-mash batch, but was using Iodophor to sanitize with. Two of the three all grain batches have been bad, but I've used the same brewing and...

AAAHHH! Help me solve Band Aid Taste

Ugh. Kegged an IPA last night and the band-aid taste is odor is even stronger. Looks like 10 gallons of nasty beer will be going down the drain. Looking at the city water dept. web site, it says that the average level of chloramine is 1.4 ppm. This was a report from 2009, the latest one...

    Building Walker's PWM, need help

Looks like we have success! Full voltage with the pot turned up, pulses as it's turned down. Now I wait for the SSR to make its way across the Pacific. Thanks again for your help Walker.

Blonde Ale Centennial Blonde (Simple 4% All Grain, 5 & 10 Gall)

OK, made an all grain batch (my second AG), fermented for 2 weeks at 72, 3 day cold crash, then force carbed in the keg. Simply outstanding. Easy to see the wild appeal. The color is great, but I do still have a bit of chill haze that should clear up, if the beer lasts that long!

    Building Walker's PWM, need help

GGRRRRR.... It looks like some of the traces have delaminated from the board. The voltage jumps around as the board is flexed. Looks like it's time to start over. Thanks again for your help Walker.

    Building Walker's PWM, need help

Yes, diodes are opposite direction and I do have a Fluke meter. I'll be home in about a half hour and can do some checking.
