    Hey sawdust guy...Hot ribs!

I didn't have time to do the 3-2-1 method like I said I would try. So I tried something I saw on Food Network...but with my twist. I have a Weber 22" classic charcoal grill. I took some fresh Spare ribs and trimmed them into St Louis cut. Got the grill hot.... I then put a little season...

I have been smoking ribs/butts for 10 or so years and have used this same method. If you like fall off the bone...

I have searched and read many threads on lagers. I haven't found a solid answer on cooling the wort....I am going to do a Marzen Lager. I have decided to pitch my starter at the cooler fermenting temps. I have an immersion chiller and it is hot here in TN. I can probably get my wort down to...

    Having a blowout

I am brewing a Kolsch with the Wyeast Kolsch yeast. The fermentation really took off and the krausen is starting to come through my 3 piece airlock. I wont be able to get the stuff to make a blow-off tube for a couple of days. Will the beer be safe with just letting it do its messy thing? The...

did I put my yeast to sleep?

I brewed up a Breakfast Stout yesterday and put the fermenting bucket in the closet. I put it in a water bath thinking it would keep the temps more consistent. Today, about 26 hours later, I checked the temp and it was 52 deg. I pulled it from the bath and put it on the floor with the room temp...

    yams instead of pumpkins?!

I had mentioned earlier that I was going to make a pumpkin ale on Sat. Guess what?....couldn't find any pumpkins anywhere. Not even canned! I already had gotten my ingredients and my starter going so I bought canned yams. Will they work? Should I just throw them into my boil?

Ok, I made a kolsch recipe kit 3 weeks ago. It used dme and some hops. I also used the wyeast Kolsch yeast. The beer sat in primary for 3 weeks and I kegged it on Friday. It was very cloudy. Today, I gave it a taste. It was of course still cloudy and not much carbonation (I know it still...
