Help with adding fruit to a Hefe..

I have a simple hefe recipe - I was going to try to start a Kellerweis clone but i'd rather try a nice wheat with some fruit this time around. (Preferably cherry) I only have a primary fermenter (Mr. Beer Keg). Should I get a can of cherries in syrup and then puree? Should I get fresh...

What commercial yeast to use for SN Kellerweis 'clone'?

I'm trying to decide between WL320 and WL300. The SN Kellerweis tastes rather clean compared to other wheat beers I've tried so i'm not sure if the WL320 should be used rather than the WL300. Then again, isn't the Kellerweis a German wheat to begin with?

Been A Great Week So Far

Worked Monday and Tuesday. Off today, tomorrow and Friday. I've got a batch of Centennial Blonde boiling away (its fine, I keep checking on it). I've got some home brew in the fridge. The house smells of sweet malt. Turkey day is tomorrow! :ban: All thats left to do is finish the...

Suggest a yeast for a nice hefe...

I got my ingredients for a simple hefe but I didn't get any yeast. My idea was to use the leftover yeast from a few Sierra Nevada Kellerweis bottles but after reading up on how to culture yeast, I don't think I have enough time. I want to brew the day before Thanksgiving. Can anyone recommend...

    Almost Flying Dog Pale Ale

My first "good" brew :ban::mug::ban: I did this in a Mr. Beer fermenter so thats why the batch size is so small. You will need to adjust boil size and time for larger batches. Batch Size: 2.2 Gallons Boil Size: 2.5 Gallons Boil Time 40 minutes. Malt: 3lbs Briess Golden Light DME 6oz Crystal...

    A couple concerns..

This is my first "real" brew (extract and steeping grains) and only my second ever. Brew day went fine except for my first boilover :drunk:. I hit the estimated post-boil gravity and my US-05 was off and doing its thing within 24 hours. Its in my fermentation chamber which stays at a steady...

    Just started my second batch

Yesterday (my first real brew day :) ) I was able to bottle my first batch (a Marzenbeir/Octoberfest) and start on my second batch. Yes, I am using a Mr. Beer kit for the time being. I have modified a coleman 52-quart 5-day cooler into a fermentation chiller so my temp stays steady at 65/66 deg...

How to add Chocolate to a recipe..?

Whats the best way to add chocolate to a brew? Add unsweetened baker's chocolate to the wort while it's hot? (Pre-melted or solid?) Add some other kind of chocolate (cocao nibs?) to the fermenter?

    First brew bubbles!

I have bubbles! :ban: Not a ton but its only been about 20 hours since I pitched the yeast. Is it normal to have a "funky yet beer-like" smell?

    Priming Solution question

Just a quick (and probably simple) question. I understand how making a priming solution (sugar + water > Boil > Cool > Carefully mix) is more consistent than priming each bottle with dry sugar BUT.... How does adding sugar water to a beer not water it down? The yeast consume the sugar to...

Question - Carbing with Grolsch Bottles

I'm going to be using Grolsch bottles to carb my beer (from a Mr. Beer kit). The Grolsch pack says 15.2 oz. The carbing instructions state 1 teaspoon sugar for a 16oz bottle. Is it safe to assume that if 16oz needs 1 tsp sure, a 15.2oz needs 95% of a tsp? (Whatever that is..) Is...

    Newbie's Fermentation Chiller

After doing some research on home brewing (this forum is great :) ) I realize that I need to keep my Mr. Beer fermenter at a stable temperature. I read over the plans for the Son of Fermenation Chiller and got an idea. I have a coleman 5-day cooler thats big enough (hopefully) to retrofit it...
