    Apple Cider Vinegar?

    This past Friday, I picked up 10gal of fresh pressed cider. When I got home, I put crushed campden tablets in and left it alone. Sunday morning I open the container to find wild yeast (I think?) had taken over. The liquid has a very strong sour smell. Do I have any options?

    Scaled this down for a 1gal recipe, and made an error when adding the pectic enzyme. Instead of adding 1 teaspoon I added 1 tablespoon! Not sure what affect that will have on the final result.
