    Apple Ale

    Since Apples are in season now, a buddy and I are thinking of brewing an Apple Ale (pale/amber). I am trying to get some input on how to use the apples as we dont want to use juice, we are looking to use fresh apples. Should we cut them up and steep with specialty grain? throw them in the boil...

    Welcome to the boards. I think I can help you in your situation. Get over to Skagway and walk to the end of main st to the last building on the right (Skagway brewing co), walk in and order a spruce tip ale. You will forget that wine ever existed.

    There is nothing gimmicky about a guy who is intensely passionate about beer, trying to experiement and have fun with his passion. What is gimmicky about re-creating recipes for ales from thousands of years ago? Just because it isnt approved by a nonsensical German law doesnt mean its a gimmick...

    Of their ancient ales I think Theobroma is the best. Though, I appreciate all of them. People have to remember that these are ancient recipes and just because they are not what you are used to in a beer, does not mean they are bad beers...
