    I thought brew like a monk was a lot like farmhouse ales. It was heavy on history and covered the Trappist & other monk brews well. I haven't read the other book yet.

    5 or 10 gallon mash tun?

    just went thru this same thing. I bought a 5 gallon but returned it & decided to go for a 10 gallon so I could brew some bigger beers. I figured it was better to spend a little more now then to have to buy a second larger one later. Now it's just a matter of Brass or SS???

    You should be fine, the K-factor only works within the same genus, so an S. cerevisiae "killer" yeast will not inhibit non-Saccharomyces yeast like Brettanomyces.

    Well, Decided to just be lazy & just threw it in there. maybe if my mix gets covered in yeast on the bottom it may reduce some of the flavor but i'm thinking it shouldn't be an issue.

    What all are you doing to control oxygen? I was just thinking of puting part of the wort to sour in a small cooler.

    Glad to see I wasn't the only one freaking out when my starter smelled funny (like Cider) I just decanted off the top & just pitched the yeast. I guess there is nothing left to do but wait & see...
