    Sam Calagione speaks

I don't think he's *****ey. I think he loves what he does and he believes in himself. There's nothing wrong with that. I can see how it could be taken in the *****ey direction, but I don't really feel that way about him.

    Blow-Off for Imperial Stout

I always put the blowoff tube inside of a Belgian 750ml bottle half full of Starsan solution and then put that inside of a small bucket. I also cut a ziplock bag and fit it over the tube where it goes into the Belgian bottle to catch any splatter that may occur. It just catches in the ziplock...

    Ok bring on the hate

Try Northern Brewer's "Cream Ale" extract kit. It's fairly light and still has plenty of flavor. Basically the best gateway beer from a BMC (Bud Miller Coor's) product into the homebrew/craft beer style you can get IMO. I've brewed that one three or four times and kept it on tap in the summer...

Fastest beers from grain to glass?!!

The "Cream Ale" from Northern Brewer is exceptionally quick. And delicious.

    New to kegging

Is the c02 tank now in the fridge and wasn't before? If you are measuring the PSI of the c02 tank warm vs cold, that's why it may appear you have used a large amount of c02. The PSI of the c02 will drop GREATLY when cold vs when at room temp. Almost to the point of being immeasurable.

Ever have a credit card number stolen???

Add me to the list of people who shopped at AHS and recently had their card compromised. Not pointing fingers. Just saying.

    Chefs Knives

I support this. As a chef in a former life, I adore my Global knives. They're very comfortable, they hold their edge longer than any other knife I've ever owned and they're sechshy. ;)

    Wisconsin Beer Trip

Totally unrelated, but I immediately thought of this when I read the subject. Haha. http://en.wikipedia.org/wiki/Wisconsin_Death_Trip Sorry. :)

    Re-thinking force carbing.

I'm also curious about this. I usually set my PSI to about 14-15 PSI and leave it for a couple of weeks, and when I try it, it's good, but 'not quite there' for several weeks even after that. I'd love to be able to speed it up a little bit by setting the PSI higher for a few days and then...

New keg, clean out the lines?

Never dealt with commercial kegs. I usually use a couple gallons of water and a few drops of Starsan in my corny kegs. Put the lid on and shake it up a bit, run some through the lines, then dump the keg and fill it with new beer, hook it back up. That's my MO.

New keg, clean out the lines?

I usually rinse out my kegs before I refill them with starsan (and water) and hook it up and run a bit of it through the line. I know Starsan will probably discolor the hose eventually, but I figure by the time this discolors the line, it's time to replace it anyways.

Beer brewer with no wine making experience...help

Also, Forrest, what does that kit include? It doesn't seem to be itemized on the website. Just curious if I'll need yeast, corks, etc.

Beer brewer with no wine making experience...help

Haha; you are a wise, and kind man. I just might order that kit here soon, too. I've ordered several things from you before, and I've never been disappointed. :)

Beer brewer with no wine making experience...help

I'm not sure how I feel about this. I think I would rather spend $150 on a kit, given the chance to make an excellent wine, and run the risk of ruining it, rather than spend $40 (?) and have it go well, but be undrinkable anyways...

Beer brewer with no wine making experience...help

I've been brewing beer for quite a while with excellent results, and I'd love to make some wine for my wife and family members. In my experience, the beer kits you can get from Northern Brewer, Austin Home Brew Supply, etc, are all excellent. Is the same true for wine kits from places such...

I have five years to brew a beer ...

This is EXACTLY what I was thinking. Duvel is like the champagne of beer IMO.

    Beer Machine Model 2000

Yeah, I tried what the FIL made in it, it was gross. Completely unattenuated tasting and gross.

    Beer Machine Model 2000

My father in law bought one of these, and a bunch of their kits. Couldn't get a single drinkable beer out of it. That being said, I have stolen the Beer Machine and it is in my closet right now with a batch of Liberty Brown (my recipe) fermenting in it. I have no need to use the thing, but I...
