    Strawberry Melomel

Fellow Meadiators, I started two gallons of strawberry melomel on Wednesday. It is going very actively and I'm looking forward to this for Christmas. I threw in around 50 raisins, used good old Fleischmann's yeast and 12 ozs. of strawberries that I mashed into a jam. Best of brewing to...

    Strawberry-Kiwi launched

Fellow Meadiators, While I am on a roll here, bought a lb. of frozen strawberries, two kiwis, 40 oz. of clove honey. Threw it together this afternoon in a gallon jug with one teaspoon of Fleischmann's. I mashed the strawberries and kiwi up pretty good. The neck of the bottle filled up...

    Stuck fermentation

Well, this has not happened to me before. Friday I started a gallon of Hansen's Apple-Strawberry using Red Star Montrachet yeast. After around six hours I saw no activity so I threw in some yeast nutrient. Yesterday I had some pretty strong activity and now it has almost completely died out...

    JAOM Time to secondary?

Fellow Meadiators, My JAOM is just now winding down it's fermentation after almost six weeks. Is now a good time to rack this off or is it better to just leave it be?

    Apricot mead?

Fellow Meadiators, I love apricots and was wondering if anybody has made an apricot Mead. If so, would it be better to use fresh ones or would processed dried ones work? I imagine there are preservatives in the dried apricots and I wonder if this might impede fermentation. Best of bubbling.

    Elderberry...first try

Greetings, Last night I racked off a one gallon batch of elderberry. I used the 3 gallon carboy as primary and it sat there ten days 'til it slowed almost completely. I took a tiny taste and was surprised how pleasant it was already. Will this remain a dark purple color or can I expect...

    Musselman's first tasting

Greetings Cidermeisters, I am sampling my first glass of this concoction-started 5 weeks ago with one gallon of Mussleman's and a quarter vial of White Labs liquid cider yeast. It just quit bubbling two days ago. There was almost no yeast cake left behind. It's not dry, nor sweet. I...

    First Mead Batch

It seems "Joe's Ancient Orange Mead" is a big hit with those who have sampled the end product. I decided to throw together a variation on it-about 3/4 gallon. I mixed 24 oz. of clover honey in warm water, crushed about 8 ounces of blackberries, threw in 1 tablespoon of good old Fleishcmann's...

    Pectic Enzyme Time

Greetings again, Today I picked up a small package of pectic enzyme. The guy at LBHS tells me it's pretty okay to toss it in at any time during the fermentation process, which I wondered about right away. From what I am finding so far it is best to include it right after mixing up a new...

    Good results so far...

After some failed experiments with juice these last two weeks I think I am excited about what is happening. Saturday afternoon I mixed up three gallons of organic pasteurized cider with White Labs English Ale yeast-liquid type. When I got up Sunday morning the airlock was bubbling away! Would...

    First time here

Greetings, I have been perusing this site for about a week and decided that there is an amazing amount of knowledge aboard. I made hard cider once when I was in high school simply by loosening a cap on some raw cider and sticking it into the back of my closet. I pretty much forgot it was...
