    Bottling mead - Caps vs Corking mead - either method superior?

    Why no commercial meads?

    Bogus. I have only found one store in my area that sells mead. It is made by Honey Run Winery in Chico, California. I think it is excellent, but then again I have nothing to compare it to, other than what I am making! Best of brewing!

    Agree with Medsen on the clove. My first batch of JAOM I used 3 drops of clove extract in a gallon and even that amount was a little too much. Guess it's all about your tastes but it can be overpowering.

    Any ideas for my fifth gallon of honey

    Rowing, I am just now tasting the apricot mead I got going a month ago. I am very happy with the way it is going. Just 2 mashed apricots, 40 oz. honey, 1 cinnamon stick, a few raisins, Lalvin EC-1118 yeast. This is a one gallon mix.

    Joshua, Don't know if you can find it in your area but some really great stuff is "Honey Run" Meadery. Their blackberry mead, or melomel is superb. They make four or five kinds. After I drank some I was inspired to try my hand at the process. So, go for it and have fun! All the best.
