    Question, which wheat yeast?

    Which yeast produces the heavy banana/bubble gum esters found in beers like Ayinger's Ur-Weisse (their dunkel)? I am trying to avoid citrus and peppery flavors. Thanks for the help, I haven't ventured into this category yet and want to get it right with the yeast the first time around.
