OKAY!!!!! I'm hooked........First batch "Pretty Damn Good"

I too started with a Mr. Beer X-mas present. I thought I would try all of the different variations. After two batches, I went to a 5 gallon extract batch. One year later I have brewed about 14 all-grain batches, built my own mash tun, chiller, kegerator, and have 6 pounds of hops in the freezer...

    Boom!!! Crime scene

Buckets reduce blowoff too. Larger headspace for krausen. No shotgun barrel like a carboy.

Just when you think you're no longer a noob...

I know this because I tried a Samuel Smith's oatmeal stout recipe from this site that was wrong. It didn't have enough Dark malts. I didn't know until I racked it. So I carbed it and just drank the first one last night. Instead of Oatmeal stout, I'm calling it toasty brown beer. It is awesome...

    Like an awesome red/brown beer.

    Boom!!! Crime scene

In my experience, wheat blows off more than barley beers.

First Brew Consumed and Disaster Avoided (for now)

Throw the rest of those beers in the fridge ASAP. Otherwise you will have many overcarbed, useless beers taking up bottle space.

How do you keep your notes? Logs?

I have about a hundred loose pieces of paper in a small folder. No order. All Chaos. Works great.

Did I screw up capping? Picture inside

Looks like water droplets to me. Stop worrying. If you end up losing 4 beers, just say a few nice words about them and drink the good ones. Then be more careful next time.

First brew - NB cream ale - overshot OG

No. Mine usually turns out a deep goldish color. I have only done all-grain though. Mine is darker than the picture on NB, but not brown.

    Favorite Brewing Music

I usually either end up putting on some Bob Marley or Rush. Bob when I just want some good vibrations and Rush when I feel like getting weird.

First brew - NB cream ale - overshot OG

You should be good. I've made that NB Cream Ale before and a little extra kick would only make it a little better. Just make sure you brew another batch of it ASAP. You'll thank me when this batch runs out.

    Lagering in a keezer

Yes, I've done my searches. Yes, most of my questions were answered that way. However, there is one aspect I could not find in existing posts. I found parts of my answer, but not specifics. If I ferment a lager in my keezer @ 50 Degrees and drop it to 35-40 Degrees while I am lagering, what...

Its was all going good til

I have left my brewbelt on overnight on accident and it got warmer than the fermometer would read. It was after active fermentation. Beer turned out great.

    Not so dark stout

I'm going to let this batch do its thing, then I'll probably make a few malt adjustments next time. Thanks for all of the tips.

    Not so dark stout

Thanks Storunner. I was hoping someone could check the SRM of that recipe. My beer does taste a little "lighter" than the Sam Smith's, but is still really tasty. I am perfectly content with keeping it the way it is. Will adding some roasted barley at the end of the mash just add more color, or...
