    Beers are coming out "thin".

    I was having a similar issue; my pale ales were extremely thin even though I was mashing at 152-154. Changed thermometers and BAM; instant body. Side by side the 2 were about 4-5 degrees apart. Might want to check that too.

    starter over flowed

    I've had that happen a couple of times and ended up OK. If it's still flowing like lava it's pushing everything outwards, making it impossible for anything to go inward.

    If you're at White Labs (Candida St, makes ya wonder where their yeast comes from (google Candida) you're in the corridor of a few. Ballast Point, Green Flash, Alesmith, Hess (tiny nano brewery). If you have time to go North Stone is quite a site.

    Hops Question - Irish Red

    I haven't tried Sam Adams version but if you want it "to style" Irish Reds are malt forward so I'd go for the longer boil and avoid any late additions. My Irish Red is usually 1 90 m addition & 45m / 30m at the latest. http://www.bjcp.org/2008styles/style09.php#1d

    Fermentation Temps continually cycle from 62-68... issue?

    From what I've listened to on The Brewing Network they (Jamil & John - Brew Strong) said to keep it consistent as possible. Better to keep it at 68 steady then swing down & up.

    Being cruel to my yeast but trying to change my ways

    I'm in So-Cal too; I get it down to about 80 - 84 with my Chiller then move the wort into the fermenter that goes into an ice bath. Once it's down to 66- 68 I pitch the yeast in. You're probably not doing excessive harm but the more consistent you can get it the better. 80 is def on the high...

    I recently used C120 (about 3-4%) in an IPA with about 60 IBU and the dark crystal played well with the hop bitterness.

    That is a solid find! I've been struggling with 10 gallon batches and taking over SWMBO's pantry for a week with a second cooler. I guess I should say she's been struggling but is a good sport about it.
