    Ah that makes sense then. I made an apple recipe and overdid the sugar so as the fermentation was nearing its end I added some more apple juice unsweetened to dilout the alcohol so the sugar would ferment out I also added in proportion to the original recipe nutrient, acid and.... campden! I...

    I didn't think campden killed the yeast? Most recepies include a crushed tablet before the yeast is pitched or is that to kill yeasts that may be present before pitching?

    Thanks, it was definately colder here this morning brrr! Fermentation was finished anyway I have removed the airlocks and added the remaining ingredients (these are both kit wines) preservatives and finings and re-fit the airlocks. They both taste fine, I'm sure they will taste much better...

    How much of an issue is not stirring/the cap drying out? I ask as I have to go away for a few days Thurs till Sun/Mon. Is it ok to leave my brews unattended in the primaries (4 days) or best to syphen them into secondaries before i go, their SG's are curently under 1020 but are likely to drop...

    Thanx for the advice, I panicked and pitched before going to bed, I decided there was probably enough room in my pot for the swell but left it in the sink just in case! Luckily on ispection this morning all is well and there is plenty of room in the pot. The blackberrys don't seem anywhere...

    Im making my first wine.

    Does the cap eventually dissapear on its own or does it need to be removed before syphoning off into secondary? My apple and raisin has quite a thick cap although it does seem to be shrinking.

    Yes a 5 gal plastic bucket, they are still going crazy Although at 1060 it has a time to go before it goes into demijons. The blackberrys have been dropped into boiling water and mashed.     A junior member indeed :D However made me think... if buying kits in the UK are duty free... I guess its perfectly legal to sell wine making kits as they contain no alcohol etc to under 18's UK and under 21's USA? How can u stop anyone buying fruit and yeast? :tank:

    As mentioned on an earlier thread I have a fig tree with lots of underdeveloped green figs on them. The chances of them maturing and ripening now autumn is on its way are they of any use? The figs seem hampered by growing in the shade of their own leaves I think they grow in sunnier countries...

    So when I do my fruits at the weekend..... ...if I cant get another lb from the market/supermarket should I top up with elderberrys or use a 250ml can of grape concentrate? Im keen to do an 'all from fruit' wine but happy to comprimise if the end product will benefit greatly? I should imagine...
