    Finishing up my Old Ale

So, my old ale has been sitting in secondary for a few months now, and I'm trying to decide what to do with it. On the one hand, I could move it to a tertiary and let it bulk age for a while longer, at the risk of losing all my yeast and making the additional aging useless (not to mention...

    non-standard bottle shapes

Hey yall, I was just wondering if anyone knew of a place where you could buy bottles other than the standard 12 or 22 oz. cylinder shape. I'd like to get some bottles shaped like flasks, or square bottles, or just anything that might be kinda visually interesting. Has anyone seen any online...

    Cranberries

I bought a pound of fresh cranberries while they were on sale for turkey day. They will go into beer. I have no earthly idea what to do with them. Cranberry lambic rocks my face off, but I have no way to fool with making a lambic currently. Discuss. Suggest. Then I will make the beer you...

    Wlp060

Hey, I was wondering if any of you had any experience with this yeast blend. I've got a starter going now, planning on brewing this weekend. Since this blend has some lager strains in it, how differently should it be handled when compared to a straight ale yeast? Any experiences or guesses??

    Idea about hydrometers

OK, so I really like to monitor my gravity during fermentation, but I hate opening up the fermenter to test and potentially exposing the brew to infection. So it occurred to me, why not just sanitize the crap out of the hydrometer, and drop it in the carboy when you pitch the yeast. Leave it...

    Who wants free beer?

Ha, drew you in! So my first ever batch is bottled, has been for about 3 weeks. It's fairly decently carbed at this point. The problem is, it doesn't really taste like beer. It's too sweet, LOOKS kinda syrupy in the glass, and just tastes funny. I don' t know enough to be able to be more...

    Secondary temperature

So, this isn't a complicated question.. What's the best temp. for secondarying an ale? Mine went through primary at about 70F, I'm just wondering if it's possible to go TOO low (obviously you don't want to freeze it....). Is 55-60F too cold, or just lovely?

    Question about cold conditioning

OK so this is more of a logistics question than anything else... I've currently got two brews in carboys. One is a batch of a high gravity old ale, which was brewed on 9/15. Around about 9/30 I transferred it to my 5 gal carboy to make room for another batch, although it was still...

Racking to secondary before fermentation is complete

So I'm planning on leaving my beer in secondary for a couple of weeks after fermentation subsides anyway. The beer was very high gravity, and is now 11 days into fermentation and still bubbling once per 10 seconds or so. Obviously it's not done, but would it hurt anything to go ahead and...

    Carbonating in bottle after filtration

I had an idea today that I wanted to run by a few of the more experienced folks around here. Let's say you've got a very light beer that you want to get extra clear. Or for whatever reason you just don't want sediment in the bottle. So, you filter out the yeast, or pasturize the beer...

Can anyone identify what's floating in my secondary?

There are some seed-looking things floating in my secondary, that I can't for the life of me figure out what they could be. Has anyone ever seen this before, and can you tell me what it is? Thanks! Matt

Old Ale experiment recipe -- lessons learned

So here's a new extract recipe. It is more or less totally made up by me, so I wouldn't go off and make it until a taste test is done in a month or so :) 1# Crystal Caramel 60L .5# Flaked Barley .25# Chocolate Malt 9# Light DME 2# Light Brown Sugar 1 cup Molasses 1 oz Target hops...

    Question about primary fermentation speed

Hey all, I have a question about how long I should expect my primary ferment to last. This is my first batch, so obviously I don't know what to really expect. I pitched my yeast at about 1am on the 13th and went to bed. I checked it around 9am and the airlock was bubbling away, a burst of...
