Founders is my go to brew, everything is mighty tasty,and the pub is pretty cool. With that said, Southern Tier puts out some pretty awsome brews as well.

If it helps at all, I use S-05 for pretty much everything, and never had any problems, even the high gravity stuff. I had an IIPA @ 10.5% that I took 8 weeks to carb, and I had to move it to a warmer room in the house 70-75. The scotch ale will only benifit from longer conditioning. Give it...

Maybe try some Special B. Last scotch ale I made, I used a pound.(all grain) Goldings and Perle. COLObrewer spot on with the long boil. I mashed high and boiled for 2hrs. Gave me a nice thick brew. Good luck!

In my opinion, Founders is the best craft beer in the state. My shop carried it this year. I think they do a good job keeping the state stocked. Hope you find some. I recomend making the drive to the pub, if you've never been there, its great. Beer is 10 time better off the tap.

I'm anywhere from .60 to 1.20 a bottle. That include everything. Grain, hops, yeast, bottles, propane, the whole works. And most of my brews average 7%.
