    Even at the coldest setting it is only reading 38 deg. I don't want to warm it up much more than that. Aren't there other options?

    This happened before and it was giving me problems with getting the fridge cold enough. I unplugged it and let it defrost, but now its back again developing like snow accumulation. I have heard about cooling fans. Will that do the trick? If not, how else do I stop this from happening?

    Oh it was different attempts :) Thats what makes it so strange for me. I just never though I would have to heat, drain, heat, drain, then finally add water and let drop to strike temp. Seems like I spent WAY too much time getting that thing to a temp where it wouldnt drop beyond my strike temp

    lol yes. That was the third time heating the cooler up too. Then i put 12.5 qts of 175 deg water in there and let it drop to strike temp before dough in.
