HELP. Risk of no crimbo beer :(

J, Don't worry about being a newbie and asking questions...that's how we all started and how we learn. Do yourself a big favor tho...read John Palmer's "How to Brew." It should answer the majority of your questions and give you a leg up on the terminology you are going to find on the forum...

    My first infection

I'm with Munch...no infection that I can see. Keg and enjoy, I bet it will be a great beer!

    Brew not fermenting

Dave...without knowing more about your process, it is impossible to know what, if anything, is wrong. Did you cool your wort prior to pitching? Did you aerate the wort? The frothy surface may be the krausen layer, which means your beer is fermenting and everything is fine. You may not have a...

    Documentation / Beer Journal

Beersmith here as well. The calendar function is a little messy and stubborn, so I don't use it anymore. It's easier for me to put that into Outlook. For those manual types that still like paper, Basic Brewing Radio was selling beer journals, but I no longer see it on their site. You may...

    Timing of first brew

If you are worried about the airlock getting clogged, rig a blowoff tube before you go. Extra insurance if you are worried, but like Yooper said, "It'll be good!" The beer in the primary for 15 days is no big deal, and some brewers are getting away from secondaries altogether favoring racking...

    My worst efficiency ever, 58%

I realize your volume was off, but I am leaning towards a bad crush. Your temps were good enough to get conversion in the time frame you specified. My grain mill made a world of difference in my efficiency and I am now getting anywhere from 76-82%.

Natural vs. Forced Carbonation in Kegs

Has anyone noticed a taste difference in their keg beer using natural carbonation with dextrose vs. forced carbonation? I am looking to stock pile some kegged beer that I would like to sit aside to naturally carbonate and condition.

Brewed an Old Speckled Hen today...Hit my gravity and temps on the nose. Finished in four hours from heating the water to cleanup. This will be an awesome brew. Best AG session yet!:ban:

    Keg Balancing.

I use 5-6 ft., 10psi, and have had no problem with foaming. You will get some responses for shorter line, and much shorter line (2in.) with reports of no foaming problems.

    Biiiig Mistake!!!!

I kinda did that in reverse. SWMBO used Oxyclean for laundry and I used her stash! Now, I have to buy the big tub to keep enough on hand.

Did you Make your Wort Chiller, or Did You Buy One?

I bought mine off of Ebay...the chiller had a minor dent, so the seller sold it to me for $29 plus $10 to ship. Works fine and I can get below 140 in 8 minutes and chilled to pitching temps in 20 minutes.
