    the continuing saga... checked gravity this morning, and it reads 1.021, so the yeasties did eat some more since Wednesday evening...

    sad to say, I did not measure the candi syrup "shot", but I still have the big majority of the package (liquid) I'll use in a Belgian.

    appreciate all the replies! yes, hydrometer reading. and yes, I steeped 2 lbs. of grains (Special B and Caramunich). I even gave it a shot of candi syrup. total OG = 1.072; 5.5 gallon batch.

    Thanks for the reply. after the bubbles in the sample settled, I re-read the hydrometer...it's 1.025 new numbers come in at 65 percent apparent. Pitched just over a week ago. was hoping to bottle this weekend, if it stays the same.

    I *DO* understand taking FG readings several days apart to confirm fermentation is done (and I WILL do so!). just curious re: apparent attenuation, versus published data for that yeast, etc... so, I have a nut brown ale (OG = 1.072). just checked the gravity and it's at 1.021. Safeale 05...

    was wondering if anyone ever made up a Homebrew 101 sheet for non-brewers...something like: "You are about to experience a homebrewed beer, hand crafted by __________. A few things to know beforehand...this brew was bottle conditioned, which means it was carbonated [etc. etc.]"

    appreciate the replies! there were 5.5 gallons into the fermenter at pitching. I tasted what was left over in the bottling bucket, and it doesn't taste bad. I guess I was worried it might not be healthful for other people to drink (*I'd* drink it); but this was a batch I made for an occasion...

    I cannot BELIEVE I did this! emptied my new fermenter into bottling bucket WITHOUT disconnecting the blow-off tube...16 oz. of Star San into the bucket before I knew it! damn, damn, DAMN!

    flavor addition w/no-chill?

    probably been asked before (my apologies, but I'm brewing now and didn't think about it until just now)… I do Aussie-style no-chill, but don't want to "lose" the flavor of that hops addition...when should I add those hops? Many Thanks!

    thanks, blubrewbbq! I live in a small house, and I can see this saving me a LOT of space (carboys, bottling bucket, hdpe "chillers", etc.) less racking, too!

    I've done several no-chill batches in the HDPE jugs...never had a problem. Thinking of buying an SS Brewtech fermenter and going from [right after the boil] to the bottle in one vessel...just thinking out loud.

    final update: RDWHAHB...it turned out fine! I *DID* have to shake them up (bottle conditioned) about a week before the event, because one of my test bottles wasn't carbed up when I tried it. gave one to a friend at the event and he liked it. he was [mock] pissed when I gave his (promised)...

    update: I left it on the yeast cake until today. it is finished at 1.013 chilled my hydro sample before tasting it and still am not thrilled with it. I think the reason is, it's tastes too thin and dry (at least from what I expected). however, I've been on a big beer (commercial) kick...

    thanks, ncbrewer. it wasn't horrible, just a little "off". I'll bet with a few weeks of age, it'll be fine. just wasn't sure if I should leave it in primary, or bottle it. glad to hear it shouldn't need extended aging.

    I guess I'm a bit worried because I want the beer to be (at least) "very good". And while I realize it's as green as can be, the sample I tasted wasn't what I'd hoped for. the event is special to me...it's a gathering of another group of enthusiasts I belong to. there will be some nationally...
