    Gravity after adding honey

    According to Beersmith, honey adds 35 gravity points per pound. So: if you have 5 gallons a 1.101 that's 505 points, plus (35 x 1.5) = 558, divided by something like 5.125 (guessing at the added volume for the honey) = 109. So, 1.109, more or less. Cheers,

    Mitigating oxygen from head space in secondary

    At my local grocery store, I can buy dry ice by the pound. For a dollar you could get a chunk plenty big to drop into the carboy, and rack the beer on top of it. Plenty of CO2 to displace anything else. Cheers,

    I would not be concerned about a "low" FG - people more often complain about it being high! The gallon you added honey to - the honey will basically ferment out completely, and you should not see an appreciably higher FG. It is a little higher - probably having more to do with yeast...

    Get yourself a big plastic tub at Maynards or Home Despot - put your carboy in that and fill it with water. Now you can keep the water cool by swapping some ice bottles in and out. It may be too late to save this batch from some funky esters, but your next one will be much improved. Cheers,
