    Now we are getting somewhere. I am moving in about a month so I can't start a brew. But I am definitely on board with this idea. This is going to be my first fruit beer. I put 18oz of "fancy" cane sugar in my last beer as an alcohol booster. I liked the results, it didn't dry it out much at all.

    Papaya? I think it would go good with the citrus hops. I had some papaya guacomole at a pirate BBQ once, so the authenticity is unquestionable. I have never put fruit in a beer before though so I can't really help, I just wanted to subscribe.

    I like it! Especially the hop schedule. But... Can you steep victory? I thought it was Partial Mash only. My first BIPA will get its first taste test on Christmas. I am more excited about this brew than I have been in a long time.

    ...Temp control during bottle conditioning? Would a beer that has fermented for about 3 weeks at a steady 65 degrees be much affected by spending a few weeks in a 65-75 degree environment to carb up? The temps are really only the ambient air temp so the bottles should change even less than...
