    I suppose you could also mash, then sparge as many times as necessary to get to your target volume. Sounds like you'll be on target if you mash once and sparge twice, but it's hard to say what your gravity will be.

    How big of a batch are you trying to make? If you fill up the cooler to mash, then again to sparge, will you end up with the volume of wort you're hoping to boil? Also, your pre-boil gravity will be lower than the gravity at which you pitch your yeast, so keep that in mind.

    well, since i tried this recipe for my first extract brew, i figured i'd give it a shot as my first all-grain brew, too. pretty much followed the recipe with one exception - i made my own invert sugar a couple of weeks ago by boiling up some sugar with fresh-squeezed lime juice.

    "Holiday Cheer" from Papazian and EdWort's Apfelwein. :) Racked both to primary yesterday and they're churning away right now. Funny how much hotter the ale ferments than the apfelwein. Left alone, the ale is running at 74F and the apfelwein is at 66F. Looks like wet towel time for the ale...

    +1 again on Dry Dock / Brew Hut. Going there for the first time (their 4th anniversary party) pushed me over the edge into homebrewing. I'm in Longmont and just ran my first batch this weekend. If I remember, I'll come back and let you know how it turned out in about a month!
