Looking at the kegmenter, is there a way to control temps or do you just need to stick them in a temp controlled fridge?

Sounds like an eventful day! Nothing a cold beer can't soothe.

I drilled a small hole into the top to accept a small airlock bung. Sometimes, I'll wrap the bung in a little sanitized Saran Wrap to ensure a decent seal. I'll either put an airlock in the bung or a blowoff tube to a small bucket with starsan in it.

What happened in at the end? Burn your shin on a hot kettle?
