San Diego International Beer Festival @ the San Diego Fair

Hey all, Anybody else going to this? Which time slot are you thinking about attending (11-3 or 4-8)? Looking forward to hanging out with some other local homebrewers from the forums and other.

Rewiring mechanical A/C: Keep compressor on

Hey all, Bought a replacement A/C unit yesterday that's mechanical. It gets my ferm chamber down to 64^F, but no lower. My fermometer is reading 70^F temps this morning, so I want to rewire the thing to keep the compressor on (doesn't really make too much difference in terms of A/C health, as...

New A/C unit in ferm chamber, keeping at 64^F

Hey all, So, my last A/C unit on top of my ferm chamber started to freeze up every time, so I bought a new one today. It's a mechanical 5,000 BTU one, which seems to be working great, but the compressor kicks on and off frequently. It hasn't gone below 64^F ambient inside the ferm chamber all...

Ferm chamber: A/C unit keeps freezing over

Hey all, My A/C unit worked fantastic 7 months ago in my last 4 brews. Yesterday, I turned it on again (checked it a week ago, blew cold air) to cool my Centennial Blonde and after being on for 11 hours, i check it. Very little airflow coming out, and ambient temps were 69^F. I pulled it out...

Brew day complete, blog updated (with photos)

Another great brew day completed, with 84% eff on the Centennial Blonde Ale from the HBT recipes section: https://www.homebrewtalk.com/f66/centennial-blonde-simple-4-all-grain-5-10-gall-42841/ I've updated my brew blog with pics, for those who like seeing other's processes and setups, etc...

    Thank heaven for Brewmaster's Warehouse

I love this company. Every order I place they up the amounts (slightly, but still higher) of hops or something else, and the one time they made a mistake, they made up for it by giving me free extras to use later on. It's a small amount of financial "loss" that they put in each order, but it...

Wanted: A big beer that's not to hoppy

I'd like to make a big beer (10% + ABV) that's low on the hops, even lower than an IPA. More like a oatmeal stout or a common porter. Can this even be done without an increase in hops to offset the alcohol? I'm hoping that by increasing the other flavors of the beer, the alcohol can be toned...

Fruit extract at bottling: need help with carbonation

Hey all, Last year I brewed a cherry wheat and added 2oz of cherry extract at bottling time (yeah, it's a bit much...). I also added the typical 5oz of priming sugar, not realizing that there were also sugars in the extract. What resulted was something that I'm surprised didn't create bottle...

Wyeast smack pack: Bloated on arrival

Hey all, Just received a pack of Wyeast 1450 Denny's fav 50 (first time using smack pack), and it's already pretty bloated. Are these supposed to come flat? If I smack this one hard enough, I'm thinking it will pop. Can anybody who's used these give me some insight as to if it's already...

    Doing a 2 year'er as a celebration.

Long story short, in exactly two years I'll be the first of my family name to earn a Master's degree, and I want to celebrate with a beer that will take the full two years to properly age. I've read the entire thread on the Sam Adams Utopia clone that paulthenurse did last year...

    Back in the game!

Well, after initially doing 9 brews last August - October (I think it's been 9) I haven't brewed anything in about 6+ months. So I just ordered a couple of brews from brewmaster's warehouse: Centennial Blonde Deception Cream Stout It feels good to be back in the game (especially after...

    Cherry wheat way overcarbed

Hi all, My cherry wheat from 6 months ago is overcarbed due to the cherry extract. Its been in the bottle for over 4 months and it is actually uncomfortable to drink...its like supercharged champagne. Anything I can do to tone it down? The flavor is good, so I really want to drink it.

    EdWorts Apfelwein...forgot about it!

Hah, so I totally forgot about the EdWort's Apfelwein I have sitting in the back corner of my fermentation chamber. I made it in early September. I'll bottle it next week...should be good in another 6 months!

    Name this Infection!

So, it appears as though I've finally got my first infection. It was my sixth batch, and the one I've been looking forward to the most - Pecan Scottish Ale. https://www.homebrewtalk.com/f65/pecan-scottish-80-a-49707/ So, help me out here if you would and let me know what to expect from this...

Just bottled my first AG: Nut Brown Ale

This is the brew that Gremlyn1 helped me on, as it was my first AG. The brew itself went great, and it tastes really great tonight when bottling. I mean really great, as in, my extract batches were "Huh, this is pretty good!" and this nut brown was "Wow! That's great!". It fermented from 1.065...

    Bee Cave IPA: 90% Efficiency

Hi brewers, So yesterday I brewed the Bee Cave Brewery IPA. It went well overall, but there were a couple of hiccups such as the flame on my turkey fryer going out 4 times. I ended up getting 7.1 total gallons of runnings from the mash, and a pre-boil gravity of 1.058 @ 72^F. After the 90...

Temp controller probe - what's the deal?

I bought this controller online, and installed it two days ago: http://www.chicompany.net/freezer-conversion-thermostat-remote-bulb-933.html?zenid=b2eed32ecd44fcfaeb885413960985a8 I have a fully insulated fermentation chamber lined with 2" insulation foam and sealed with Great Stuff. Also...

    94.15% Efficiency...is this for real?

Today I brewed up 5.5 gallons of the Pecan Scottish Ale in the recipes forum. ( https://www.homebrewtalk.com/f65/pecan-scottish-80-a-49707/ ). I mashed in at 170F water, which was the intended 154F when closing the lid on the mash tun. I waited 60min (recipe says to wait 75min, but I missed that...

    Kona Brewing: Pipeline Porter

I just picked a sixer of this up at the local liquor store today, and this is one amazing porter! I'm instantly hooked, and would love to do it myself. I know the ingredients (based on their PDF of the beer, on their site) but have no idea the amounts of each. So please, if you've had this...

    Bottle Conditioning - Newbie Question

Even though I've done 6 batches now, I'm just starting to reap the benefits of actually drinking my creations. With that said, I've noticed a HUGE difference in drinkability at week 2.5 of bottle conditioning between my first (Blonde Ale, was very drinkable and good) and my next batches (Cherry...
