Best way to make coffee stout?

I use a cold coffee press, about 6oz. of coffee by weight with 40oz. of cold tap water for 24 hours than pitch to secondary or keg. I use 2 for more coffee kick at times, really good results.

    Belgian Pilsner diastatic power

Oh ya I let it it cool, when the wort chilled i managed to get a 1.051 gravity so atleast it should be ok, just don't know what happened, I never used this basemalt before and I know with a 1.6L it should have enough diastolic power.:rockin:

    Belgian Pilsner diastatic power

154F mash one hour, 168F sparge. Grain is about two months old, not stale and kept in cool dry place. Everything went very well, never had a problem like this. To salvage batch I added one cup of sugar during boil.

    Belgian Pilsner diastatic power

Does Belgian Pilsner have a low diastolic power? Just brewed 9lbs with 2 lbs of flaked rice and 1lb carahell had only 9 bricks when I took a sample from the boil. :rockin:
