    I also added nottingham yeast in mine and after three weeks it's almost there. I couldn't help myself I've waited so long and it is way past my expectations!     Ditto on the alchemy just got it and the iphone app it's pretty cool. You get them on the same network and they will sync all recipes and inventory for you. Pretty handy I'm pumped to have it.

    What would you ask Eric Salazar (New Belgium Sours)?

    Try to get the grains and hopes he uses in Erics ale. Almighty had some good questions about a mix or if they pitch the bugs seperate. I asked a bunch of those questions when I went to new belgium and went in the foeder aging room but the tour guide had no idea.

    I'm only putting three taps in. I don't brew quite enough to keep four going at all times and I didn't want to deal with the air flow issue by packing it too tight. If I decide I want more taps in the future I'll probably build another collar anyway.
