Yes Ginger beer is alcoholic and I do alcoholic lemonade it took a while to get the sugar content right but trial and error prevailed you cannot taste the alcohol but is there at about 4%
The Bottles only explode if the fermentation is still going on if the fermentation has completed its cycle it will be fine but adding sugar will increase fermentation so you will need to give it time to sit before bottling.
what better hobby can you have its like been your own scientist tweaking this and tweaking that.
I brew beer but also do alcoholic lemonade and ginger beer and my friends love the stuff I must admit I have got it tasting just fine.
